Hicks & Healey Cornish

Cornwall waited three centuries before they gave the world their first single malt whiskey. A collaboration between ale brewers St. Austell and brandy brewers Healey Cyder resulted in the Hicks & Healey Cornish. Distilled in the smallest, legal copper stills in the UK to allow for the longer interaction between the metal and the spirit, the drink is then aged for seven years in American bourbon charred casks for character. The resulting concoction is a bouquet of spice, honey and barley with hints of cocoa and caramel with a vanilla finish. It’s available in limited quantities. ~$230+.
